Crystal Shrimp Dumpling

Mix 100g of orange flour + 5g of raw flour with boiling water, add another 5g during the process, and continue to stir until it forms a dough, add 10g of lard and stir evenly, then put it in a sealed space and let it stand for 10 minutes to ferment.

Chop the fillings and add the seasonings to mix the glue (sticky). Personally, I like to rub it with my hands, which saves time and effort.

Take out the dough to make dumpling wrappers and stuff them. Put cold water into the pot and steam on high heat for about 10 minutes. If it takes too long, the skin will burst and become exposed.

(Put it in a glass sealed fresh-keeping box and refrigerate it, and heat it in the microwave the next day, the taste remains the same.)
