Cucumber and Carrot Fried Rice

Prepare the necessary ingredients, wash the cucumber, carrots, and pleurotus eryngii, (ham sausage) and cut into cubes. The rice is cooked in advance.

Heat oil in the pan, put the carrots, eryngii mushrooms, and ham sausage into the pan and stir fry.

Stir-fry until half cooked, add rice and continue to stir-fry, add appropriate amount of salt and stir-fry evenly. Then beat an egg and stir-fry evenly, and finally add diced cucumber and stir-fry. If you don’t like to eat too ripe cucumber, you don’t need to fry it for too long.

Finally, pour an appropriate amount of extremely fresh, chopped green onion and peanut oil and stir-fry evenly before serving.
