Cucumber Refreshing and Sour

Wash the peppercorns and put them in a fresh-keeping box, add boiling water to brew them, and make a peppercorn water for later use; after soaking the whole fresh cucumber in clean water, sprinkle with a little salt to scrub the epidermis, and rinse it with clean water again. Water control reserve;

Without peeling the cucumbers, cut them into hob pieces with a knife and put them in a large basin, sprinkle them with refined salt and marinate for a while;

Spread the chilled pepper in the water, add brewed vinegar (white vinegar), a little licorice powder and stir well;

Add enough sugar to the mixed vinegar sauce (the amount of sugar added is always more than you can imagine, at least 5 times the amount of vinegar), stir well and set aside

Add chopped chili (you can also add dried chili), and the amount depends on the degree of spiciness you can bear. Stir the mixed sour vinegar, try the taste, whether it is salt, sweet or sour, and adjust the ingredients according to personal taste. The finished vinegar should be slightly heavy;

Put the marinated cucumber strips in the fresh-keeping water, immerse them in sour vinegar juice, cover them tightly, put them in the refrigerator, soak them for about 2 hours and take them out for consumption. The taste is the best!
