1. Cut the ribs and wash them, add light soy sauce, dark soy sauce, cooking wine, white pepper, salt, and marinate for half an hour

2. Pour an appropriate amount of oil into the pan, heat it up, add the ginger slices and fry

3. Pour in the marinated ribs and fry until the surface is slightly browned

4. Add boiling water, about 2 cm past the ribs

5. Add 1 tablespoon sugar

6. Then put the ketchup, put more

7. According to personal preference, you can pour some dark soy sauce for coloring. If you don’t like the color, you don’t need to pour it. Let it simmer on low heat for 40 minutes.
