Delicious and Fishy Belly-wrapped Chicken

The pork belly must be fresh, choose the day's, so that the fishy smell will be less and it is easy to clean. I choose free-range hens for the chicken. Although the meat is not very good to stew, the soup will taste better than ordinary chicken.

Turn the pork belly over, and rub the inner surface with flour two to three times, rub the flour on one side, then wash it with running water, and repeat. For the fourth time, scrub with white vinegar, rinse the inside and outside, and feel that there is no mucus on the inner wall. Turn it over and set aside.

Remove the chicken's internal organs, egg yolk, etc., otherwise the soup will become muddy.

After washing the chicken, put it in the pot with plenty of water for 3 minutes, and then wash it for later use.

5 grams of wolfberry, I used half of it. Some people put it last, I usually put it in when the soup is cooked, so that the nutrients can be fully released into the soup

Put the white pepper, sliced ginger and goji berries into the belly of the well-watered chicken, then stuff the whole into the belly of the pork, and seal the opening with a toothpick. The head of the pork belly does not need to be closed. I don't like to cut the chicken into pieces and stuff it in. I always think that pork belly chicken like that is a bit less interesting.

Put the sealed pork belly into the pot with its mouth facing down. This step is the key to not fishy pork belly chicken. The fishy water on the inner wall of the pork belly will flow out along the unclosed pork belly head and gaps.

After the water has boiled for two minutes, drain the water, and then wash the whole pork belly chicken with warm water. Then use a toothpick to seal the pork belly head and the cracked area.

Add about 700ml of cold water, so that half of the pork belly is exposed to the surface, and steam it in a pot over water for an hour and a half. If you want to drink a thicker soup, add less water, on the contrary, add more water.

Then cut the pork belly and take out the chicken. Cut the pork belly into long strips. Tear the chicken into shreds or small pieces. I like to use the whole chicken, I especially enjoy the process of hand tearing😂

Put the soup with the cut pork belly and chicken shreds into the pot to heat. According to your taste, add a small spoonful of salt and chopped green onion to taste, and you can get out of the pot. It's really not fishy at all, and the soup is delicious without salt, very sweet!

Actually my wife ate like this, because her mouth was so painful that she couldn't open her mouth, so she could only cut the pork belly into very small pieces of meat. In order to eat the meat, she also had to fight it. 😁
Tips:
1. The pork belly must be filled with the whole chicken first, and then the water will be drenched together. Otherwise, the pork belly will shrink before it gets too water, and it will be difficult to stuff the chicken in.
2. When the water is drenched, the opening is facing down, which is more convenient for the fishy water to be boiled out.
3. It is recommended to stew in an electric steamer over water, not in a casserole. Stewed pork belly and chicken soup over water is nourishing and not easy to get angry.
