Dragon Fruit Egg Fried Rice

Ingredients are ready: dragon fruit, cooked rice, carrots, eggs, green onions

Cut the dragon fruit in half with a knife. Use a small round spoon to dig out the flesh of half of the dragon fruit. Keep the dragon fruit skin for later use.

Wash and dice carrots, beat eggs into egg mixture, wash and cut green onions

Pour soybean oil into the pot, heat the oil to 70% hot, add the diced carrots and stir fry

Stir-fry the carrots for 1 minute, evenly sprinkle the egg liquid on the carrots, turn to low heat, and wait until the egg liquid is slowly set
