Dried Cured Fish

Clean the grass carp and wipe dry the water;

Cut into fish pieces about 5-7CM thick;

Season the marinade, put salt, light soy sauce, a little dark soy sauce, ginger, pepper, rice wine, white sugar, and mix well;

Pour into the fish cubes, grab them with your hands, and taste;

More than 3 hours, or marinate overnight, and hang it on bamboo sticks to dry in the next day;

This is the dried fish that has been dried for a day and night. The surface water is all dry. Continue to dry until it is completely dry. It will take about 5 days, depending on the weather!

The dried fish is soaked in hot water for a while, then steamed in a pot and ready to be eaten. It is delicious with rice, and it's a good meal!
Tips:
Bacon and cured fish are almost the same, you can also make cured chicken and duck! However, some places do not put soy sauce in the cured fish, it will be white directly after it is dried. I personally like the flavor of the sauce, so I still follow the old recipe!
