It is more fresh and sweet than salted fish and eggplant pot!

Dried Squid and Eggplant in Clay Pot

1. Soak the dried squid in clean water for 2 hours

2. Dried squid cut into strips

3. After scrubbing the surface with salt, cut the eggplant into strips without peeling

4. Ingredients: shallot, garlic, chili

5. Add oil in a cold pan (add more oil, so the eggplant absorbs oil), low heat

6. After the oil is hot, pour the dried squid and fry it, add some salt, and fry until the surface of the dried squid becomes crispy, pick up the dried squid and place it in a casserole, leaving the oil behind

7. Put the eggplant in the pan and then fry it until the eggplant becomes soft and the surface changes color, pick it up and pour it into a casserole. (If the eggplant is soaked in the oil, it can be fried slowly on low heat)

8. Add soy sauce, oyster sauce, and cold water to the casserole (cover the eggplant). After it is boiled over high heat, cover and simmer for 10 minutes

9. Sprinkle the scallions on the pot

Tips:

1. Soak dried squid for 2 hours.
2. Add some salt when frying the dried squid, so that the dried squid will taste good.
3. When frying the eggplant, if there is not enough oil, you can slowly fry it over a low fire until the skin is a little dry.
