1. Put the razor clams in a large bowl and add tap water to soak overnight to spit out the mud and sand.

3. Use a knife to gently cut off the ligaments attached to the back of the razor clams or cut a little bit, so that they do not open the shell during the curing process.

4. Add ginger slices, salt and 500ml of boiling water to a large bowl and stir until the salt melts and let cool.
