Drunk Salted Clam

Put the razor clams in a large bowl and add tap water to soak overnight to spit out the mud and sand.

Remove the razor clams.

Use a knife to gently cut off the ligaments attached to the back of the razor clams or cut a little bit, so that they do not open the shell during the curing process.

Add ginger slices, salt and 500ml of boiling water to a large bowl and stir until the salt melts and let cool.

Put the razor clams in the cooled brine, then add white wine and mix well, cover with plastic wrap and put in the refrigerator to soak for 7-10 days. (The salt water must not live the razor clams)

Take out a part of the salted razor clams and place them on a plate, pour vinegar and sprinkle with sugar, stir evenly and get drunk for 10 minutes.

Tips:
1. Without sugar and vinegar, add a little more Huadiao wine and mix well for 10 minutes.
