Dried fish is soaked in clear water one night in advance to remove excess salt, drain the water and air dry slightly, put oil in the pot, add the air-dried small fish to a low heat and stir slowly, stir until the small fish becomes brown and remove for use.

Tips:
1. The dried fish itself is very salty, so it is necessary to soak it in advance to remove the salt, and then there is no need to add additional salt in the whole process;
2. After soaking the dried fish, take it out as much as possible and let them air dry naturally. They will not fry in the pan. If it is too late, use a kitchen napkin to absorb the water.
