Duck Soup with Winter Melon and Barley

Wash the lotus seeds, Zhaoshi, barley, and candied dates, soak everything in advance except the candied dates

Wash the wax gourd, remove the flesh, and do not need to peel it. The skin of the wax gourd has obvious effect of distilling water. The skin of the wax gourd after boiling is also quite delicious. Cut the wax gourd into large pieces.

Remove the skin of the old duck so that the soup is not so fatty, cut into large pieces

After the water in the pot is boiled, put the duck meat in and blanch it to remove the bloody smell and foam

Add water to the earthenware pot, add duck meat, ginger slices, and candied dates. After the water is boiled, put in the soaked lotus seeds, Zhaoshi and barley to prevent sticking to the bottom.

Add the winter melon cubes, cover the pot, and boil for one and a half hours on a medium-to-low heat, and finally add salt to taste.
