Duck Wings in Sauce

Wash the duck wings and set aside. Place the duck wings in boiling water and blanch them, remove them and wash them for later use.

Put oil in the pot, put the spices, ginger, and garlic in the pot until fragrant.

Add the blanched duck wings and stir fry until fragrant.

Put a pinch of salt.

Pour boiling water, without the duck wings.

Add light soy sauce, dark soy sauce, cooking wine, rock sugar, cover and simmer for 1 and a half hours. (Note that the soy sauce should be added after the hot water is finished, so that the color will be more even.)
Tips:
Duck wings must be blanched, otherwise it will be fishy. \nIt takes boiling water to make the soy sauce evenly spread on the duck wings. \nAfter cooking for a while, turn on a low heat to simmer, it is best to use a casserole because the casserole is heated evenly.
