I used a lot of sea pepper and Chinese pepper to stir-fry, all the spiciness and numbness penetrated into the rabbit meat, and I couldn't speak the spicy food. I wanted to continue to eat and continue to be dumb, so I called it dumb rabbit. I have eaten dumb rabbit a few times, and it feels like it is far from our Luzhou taste, almost something, so today I made dumb rabbit and used my favorite ginger and bean paste, which just met my taste

【dumb Rabbit】

1. Choose male rabbits for rabbits [male rabbits are tender and female rabbits are soft]

2. Line pepper, dried sea pepper, cut into sections; rabbit halves, slaughtered in small pieces, 2 squares inside, flavored with salt, soy flour, topped with gorgon; grabbed a large amount of pepper

3. Put more oil in the pot. When the oil is 80% hot, add a small amount of Chinese pepper and fry it with the well-sized rabbit diced. Fry for 20 seconds, then pick it up and set aside [Make sure that the diced rabbit is tender]

4. Finely chop bean paste, shred ginger

5. Clean the pan, add the oil again, fry the bean paste for color, add the ginger and fry together, until the ginger is fried

6. Put the diced rabbit and fry for 30 seconds, pick it up and set aside

7. Clean the pot, add the oil again, when the oil is 60% hot, sauté the off-line pepper and peppercorns until fragrant, add a little salt

8. Then add the dried sea pepper and fry together for a minute. It feels spicy, the flavor of pepper comes out

9. Finally put the diced rabbits and stir-fry together for 30 seconds

Tips:

Because I used Doubanjiang, when all the rabbits are made, add some fluffy salt to the salt.
