Dust Sanxian Soup
1.
After buying the fresh pork red, soak it in boiled salt water for 30 minutes, then remove and drain the water.
2.
Loofah peeled and washed
3.
Cut into hob blocks
4.
Cut the lean meat into shreds and marinate for a while with salt, chicken powder and cornstarch
5.
Put a little oil in the pot and heat it over medium heat, crack the egg and fry it into a poached egg shape
6.
Boil about 4-5 bowls of water in a soup pot, pour the cut loofah, add the marinated pork, fried eggs, and soaked pork red, and cook for 15-20 minutes on high heat
7.
Adjust a little salt, chicken powder, and pepper, stir evenly, sprinkle with chopped green onion and serve
Tips:
The pork red itself uses salt when it solidifies. Do not add too much salt when cooking the soup. It is best to try the taste before deciding whether to add salt. Loofah, pork shreds, and eggs cook faster. This soup is much easier than boiling soup.
