Eating Mutton on Dog Days-burdock and Mutton Soup

Wash lamb and cut into pieces.

Put the lamb in cold water and boil the bleeding water to remove the foam.

Carrots are cut into pieces, burdock is peeled and cut into small pieces in running water, soaked in clean water for later use.

Boil hot water in a casserole, add green onions, ginger, red dates, add lamb, burdock and carrots to a boil over high heat, turn off the heat and simmer for 40 minutes.

Season with salt and pepper when it comes out of the pan.
Tips:
Burdock is easy to oxidize. Soak it in water as soon as possible after peeling it. Adding a little white vinegar in the water would be better. When cooking meat, it is easier to boil the blood in a pot under cold water.
