Egg Fried Noodle

Main ingredients: 3 eggs, fresh noodles, cucumber. Accessories: vegetable oil, soy sauce (or sweet noodle sauce), chives, light soy sauce

Beat the eggs, stir into egg liquid, wash and shred cucumber, wash and mince chives

Heat the pan with cold oil. When the oil temperature is 60% hot, pour the egg liquid into the pan and stir continuously with chopsticks until the egg liquid has solidified into even small pieces, and set aside for later use.

Heat the pan with cold oil, heat the oil for 70%, add green onion to explode the fragrance, add the soybean paste (my soybean paste is relatively dry, and mix it with water in advance), and stir-fry the sauce after the aroma.

Add light soy sauce and stir fry again evenly. Some people like to eat oyster sauce and can add some to boil the sauce together. Add in water and stir well, simmer on low heat until small bubbles appear

Add the fried egg cubes to the sauce and stir-fry evenly to give the sauce aroma and sprinkle with chopped chives. Eggs are the best condiment, no other condiments are needed.

Add water to the pot and bring it to a boil. Add fresh noodles. After the heat is boiled, add cold water to a boil to get out of the pot. Scoop out the noodles, put them in cold boiling water and let them cool. Take them out and put them in a bowl. Pour the egg fry sauce, sprinkle with cucumber, and mix well. You can also add your favorite vegetables and mix well. can
Tips:
1. Don't scramble the eggs too old, because they taste bad.
2. Soybean paste can be replaced with sweet noodle paste. Don't make it too hot when boiling, or the paste will become bitter and affect the taste.
