Egg Yolk Bean Paste Mooncakes

Soak the egg yolk in oil for 2-3 days to let the egg yolk return to the oil.

Bake in the oven at 170 degrees for 8-10 minutes, then take it out and let cool.

Put the invert syrup, liquid soap, oil and salt together and stir together.

Then pour the flour and milk powder and stir.

Knead into a dough, seal and let stand for 1 hour.

Take advantage of this gap to dispose of the filling: wrap the egg yolk with the bean paste filling.

Round, each about 45g.

Take out the resting dough and divide it into about 30g pieces.

Now start to officially pack mooncakes! Knead the crust to be thick in the middle and thin around the edges.

Wrap it with bean paste and egg yolk filling, push it up slowly with a tiger's mouth, and round it.

Stick a little flour on it.

Sprinkle the mold with flour, turn it around, pour out the excess flour.

Put the mooncake ball into the mold and flatten it slightly with the palm of your hand.

Press out the pattern and slowly lift the mold.

It looks pretty good.

Put it into the preheated oven and bake at 200 degrees for about 5 minutes.

The liquid egg yolk is broken up.

Take out the moon cakes from the oven, and brush a thin layer of egg yolk liquid on the surface without brushing the sides.

Then bake it for about 15 minutes.

Tips:
1. The mooncakes just baked are still relatively hard, and they need to be left for a few days and the skin will become soft and delicious after returning to the oil.
2. When making it for the first time, it is recommended that the pie crust: filling = 3:7 or 4:6; if the crust is too thin, it is easy to reveal the filling.
3. You must dry your own fried bean paste stuffing a little bit, otherwise it will be easy to leak, or you can purchase the finished stuffing, but it may not be authentic and delicious.
