Emerald Refreshing Pea Cake

The amount of fresh peas can also be replaced with peeled yellow peas. Pick out the bad beans and wash them. If you don’t have fresh peas, you can use dried beans, which should be soaked for 24 hours in advance.

Add water and boil for about five minutes. When cooking, put a few drops of cooking oil and a pinch of baking soda in the pot to make the peas more beautiful in color.

Quickly remove the peas and put them in cold water, and pass the water several times to pick out the peeled skins. Perfectionists can also squeeze off the unpeeled ones and control the water.

The red dates are pitted and cut into small granules. The raisins are cleaned and chopped slightly for later use.

Find a larger pot, pour the peas into it, add raisins and chopped red dates according to your preference, if you don’t like it, you can just put sugar. The taste of our house is relatively light, so without sugar, the light sweetness of red dates and raisins is delicious.

Sprinkle 40 grams of flour into the peas. Don't have too much flour. Don't use chopsticks or any tools. Use your hands to hold the pots up and down, so that the peas are covered with a thin layer of flour.

Find a mold of the right size. I use a normal-sized sealed box. You can also use a bowl or basin directly. The inner wall of the container is brushed with a thin layer of cooking oil. Pour the well-mixed peas into the box, press firmly with your hands or with a spoon, don't use too much force, keep the peas intact, and the cut section is more beautiful. If you touch your hands, just dip your hands in some water.

Bring the water in the steamer to a boil, put the mold in, steam for 20 minutes on high heat, take it out after steaming, let cool and cut into pieces before eating.
