Exposed Fish

The head and tail of the herring are removed, leaving the middle section, and divided into two pieces along the middle bone. Then cut the fish into pieces about 5mm thick.

Add cooking wine, light soy sauce, ginger, garlic, salt and egg white cornstarch to the fish, mix well and marinate for 20 minutes

Pour oil in the pot, slowly add the fish pieces after heating, deep fry until golden brown, drain the oil and remove.
Tips:
The heat is slightly lower when frying fish.
