Fanhe | Stuffed Bitter Gourd

Wash the fresh bitter gourd, cut the head and tail obliquely, cut into 3cm wide pieces, and hollow out the flesh and seeds in the center

Bring the water to a boil, add the bitter gourd section to high heat and cook for 2 minutes, remove and drain.

Chop green onion, shiitake mushrooms, and shrimp into a large bowl together with ground pork. Add salt and light soy sauce. Stir vigorously in the same direction and beat several times. Add water (30ml) several times in between.

Fill the whipped fillings one by one into the bitter gourd segments and press tightly.

Put the brewed bitter gourd segments on the plate. After the water in the steamer boils, put the bitter gourd on the basket, cover it, and steam for 40 minutes until fully cooked

Decant the soup in the plate into the wok, add water starch and 1 teaspoon of water, boil it to make a transparent gorgon juice, and pour it on the bitter gourd section.
