Farmhouse: Eggplant Mixed with Potatoes

Prepare ingredients.

Wash and peel the potatoes, steam them in a steamer, and when the chopsticks are easy to stick in, the potatoes are ready. Don't steam the eggplant too vigorously. Put the eggplant in the steam when the potatoes are almost ready.

Wash the coriander and cut into small sections, tear the green onion leaves into strips, prepare 1 spoon of green onion partner soy sauce, the sauce: (half a spoon of oyster sauce + half a spoon of balsamic vinegar + less than half a spoon of sesame oil, mix well).

Cut the steamed potatoes into small pieces, squeeze out the water from the eggplant and tear it into strips by hand.

Sprinkle with coriander, green onions, and stir in soybean paste.

Use a spoonful of the mixed sauce and pour it evenly on top of the mixed vegetables.

Sauce is appetizing, less oily and healthy.
