Fatty Liver Tip
1.
Carrot slices, onion diced, fungus soaked and cleaned
2.
Wash the liver and cut willow leaves, about the thickness of a one-yuan coin, add white pepper, cooking wine, and salt. Remember, don’t wash the liver after it’s cut, otherwise the nutrition will be lost. Some chefs wash and some chefs don’t, but I later agreed that it makes sense not to wash
3.
Mix a bowl of gorgon, put starch, a little water to boil, add light soy sauce, dark soy sauce, vinegar, cooking wine, salt, sugar, chicken essence, sesame oil, and minced garlic. Remember that starch can't be too much
4.
Put oil in the pot and heat it until 70% hot. Before putting the pork liver into the pot, put some dry starch and stir evenly. The dried starch must be put before the pot, so that the liver can be crispy and tender. Stir-fry quickly, about 15 seconds, the liver will change color.
5.
The liver is discolored, but the inside is still very tender, take it out for use
6.
Put oil in a pan, heat it to 50%, add carrots and onions and stir fry for half a minute
7.
Put the fungus and stir fry for ten seconds
8.
Add the liver and stir fry evenly
9.
Put in a bowl of gorgon, don’t move, stir fry after 5 seconds
10.
Out of the pot and plate
