Fen Kudzu Soup

The keel is blanched and washed, and the red dates are pitted for later use.

Wash the pink kudzu, peel and cut into cubes.

Put the blanched keel into a pot, add 6 liters of water and bring to a boil.

Add the red dates and simmer for 2 hours before eating.

You can add an appropriate amount of salt to taste.
Tips:
1. Keel can be replaced with small ribs or lean meat.
2. The above serving size is provided for 5-6 people. For example, the serving size for two people can be reduced by half.
3. You can use a slow cooker to cook slowly, start to cook at night until the next morning.
