Fiddlehead

Pick off the old stems of the bracken and wash it.

Cut the bracken into three sections, blanch them in a pot of boiling water, and remove them.

Control the water with bracken, wash and shred cucumber, peel and shred carrots and set aside.

Cut the dried chili into a bowl, add salt, vinegar, sugar, light soy sauce, minced ginger, and minced garlic.
5.
Heat the pan and put the oil, pour in the sauce, fry it out and turn off the heat.
6.
Pour the fried fragrant sauce on the bracken and mix well.
