1. Prepare the star anise, chop the green onion, ginger, garlic, and chili.

2. After the catfish is killed by the store, it is taken home and cleaned.

3. Cut the catfish into slices. (Catfish is very slippery. Be careful when you cut it. I cut it with scissors)

4. Pour a little oil in the pot and put the catfish in the frying.

5. Fry it slightly until the surface turns yellow.

6. Leave the remaining oil in the pot, sauté the onion, ginger, garlic, and star anise until fragrant.

7. After sauteing, add 1 tablespoon of hot pot spicy seasoning and stir well. (It can’t be too spicy, so I only put 1 spoon)

8. Put the fried fish in the pan and fry it for a while.

9. Pour the water over the catfish, add 1 tablespoon of salt, 1⁄2 tablespoon of sugar, 1 tablespoon of cooking wine, 1⁄2 tablespoon of vinegar, and pepper.
