Fish-flavored Eggplant Pot

Cut eggplant into strips and wash in cold water

Cut minced meat, garlic, green onions, and green peppers for later use.

Drain the eggplant out of the water, put it in a frying pan and fry it until soft. I forgot to take a picture in this step. Put light soy sauce, dark soy sauce, sugar, and old vinegar in a bowl to make fish-flavored juice for later use.

Put a little oil in the pan, stir-fry the minced meat and stir-fry with minced garlic until fragrant

Add the bean paste and fry the red oil, then add the fish-flavored sauce, add some water to boil, pour it on the fried eggplant, put it in a casserole and cook for 10 minutes to taste. Add the green peppers when the pan is about to rise.
