Fish Head Loofah Soup

Prepare raw materials in advance

Cut the loofah into 4-5 cm long sections; smash the old ginger and garlic; cut the white onion into sections; cut the green onion leaves into flowers and set aside

Pour the oil in the pot and heat it to 60%, add the peppercorns, garlic, ginger, green onion and saute until fragrant

Then add the fish head, pour in the cooking wine and stir fry for 2-3 minutes, add an appropriate amount of water, boil, and put the loofah to cook.

Just sprinkle with salt and white pepper to taste before serving, sprinkle with chopped green onion and serve
Tips:
1. The fish head is cleaned without cooking wine marinating, but cooking wine needs to be added to remove the fishy smell when stir-frying in the pot
2. After the fish head is boiled, turn to low heat and simmer slowly. After the soup turns white, add the loofah to make the taste more delicious.
