Flavored Crispy Cowpea

Prepare crispy and tender fresh cowpeas.

Bring water to a boil in a pot, add cowpeas, and blanch them until they all turn green.

Remove and drain the water, and tie them one by one with a string.

Put it on a bamboo pole and put it in the outdoor sun for several hours; until the cowpea turns off-white, but there is still a little water left, it should not be too dry.

The dried cowpeas are cleaned up; green and red peppers are ready.

Cut the beans into inch-long pieces; smash the garlic; cut the green and red peppers into small pieces for later use.

Heat the oil in a pan, sauté the garlic cubes, pour in the cowpea, add salt and stir fry.

Pour in the green and red peppers, add salt, and stir well.

Stir-fried cowpea, adjust the flavor and put it into a bowl.
Tips:
1. Choose fresh, crispy and full-flesh cowpeas to make it very crispy.
2. Blanch the cowpea until it turns dark green. Don't cook it for a long time.
3. I personally think that the flavor of fried crispy cowpea can be a little more focused, and the spicy fried with dried red pepper is delicious.
4. The amount of cowpeas will be reduced after being blanched and sun-dried, so make more fresh products.
