Flower-like Pasta~【jujube Cake】

Prepare the ingredients! Wash the jujube in advance and soak for 1 hour. (This recipe is for making a big jujube flower cake, yellow dough is not included in this recipe)

Put the milk at room temperature in the mixing tank of the cook machine, add 30 grams of sugar, 5 grams of yeast, and stir evenly with a spoon.

Add 500 grams of all-purpose flour.

The cook machine is installed, the power is turned on, and the kneading is turned to the second gear, and the kneading is particularly smooth in 5 minutes.

Take out the kneaded dough and knead it well, cover it with plastic wrap and let it stand for 10 minutes. This jujube cake chooses the one-time fermentation method.

Divide the large dough into 260 grams each, 220 pieces each, and the rest is about 320 grams, save it for the rim.

The two separated doughs are covered with plastic wrap and put aside for later use. The remaining 320 grams are rolled into thin strips and cut into similar size agents.

Take a potion and roll it into a strip of about 8 cm.

Wipe the jujube with kitchen paper, take a jujube and surround it with a long rubbed strip, pinch the two ends to form a drop shape.

Make a number of water drop shapes as a border around the jujube cake.

Take 260 grams of the dough and knead it evenly and roll it into a round shape. It is about the same size as an 8-inch center of silicone pad. If there is no silicone pad, use an 8-inch plate for comparison. This kind of bakeware has an eye in the middle, just like our steaming steamer for steamed buns. It is air-permeable. In the next step without a steaming oven, put the noodles in the steamer covered with damp cloth or greased paper.

Put the steaming pan into the ukoeoHQ62 steaming oven, (fill the water tank with pure water, do not put tap water, there will be limescale)

Choose a temperature of 35 degrees for the steaming oven, and the time is about 20-25 minutes, depending on the state, generally this kind of steamed buns should not be too big, it will deform and affect the appearance; (steamer put the pot with warm water not exceeding 40 degrees , Put the steamer in, cover the lid and send).

After the jujube cake is fermented, take it out, and select the preheating steam function in the ukoeoHQ62 steaming oven at 100 degrees for 5 minutes.

Put the jujube cake in the middle of the steaming oven at 100 degrees for 25 minutes. Don't open the steamer door immediately after the time is up. Let it simmer for 5 minutes to prevent the jujube cake from shrinking into the face of the old lady when it is cold. (The steamer is directly put on the gas stove to boil on medium-high heat, turn to medium heat and steam for 20-25 minutes, turn off the heat, turn off the heat and simmer for 5 minutes, then open the lid and take out the jujube cake)

After simmering, open the steaming oven door and take out the steaming pan. Don’t worry about water drops dripping on the jujube cake when steaming the steamed buns. The surface is very smooth.

Take out the jujube flower cake and put it on a drying net to dissipate the air. After the steaming oven cleans up the moisture inside, the jujube flower cake will not dry out if it is placed in the steaming oven overnight, because there is still a certain amount of humidity inside. Just heat it up and eat it.

Tips:
1. The water absorption rate of flour is different, as well as the factors such as seasons and humidity, and the amount of liquid will also be different. I use the Xinliang core noodle wheat flour, which has a high water absorption rate. 500 grams of flour uses 290 grams of milk. The dough that comes out at the end is still the kind of slightly harder dough, because the dough needs to be hardened because of the shape.
2. I use a steamed jujube cake, if you like the second, you can take the second, it depends on your personal preference.
3. If there is no steaming oven, use a steamer to ferment with warm water. After the fermentation is complete, steam directly on the fire. After the medium-high heat is boiled, turn to medium heat and steam for about 20-25 minutes. The steaming time is determined according to the size of the jujube cake. Turn off the fire and simmer. Boil the pan for 5 minutes to prevent the buns from suddenly shrinking when cold.
4. I use a ukoeoHQ62 steaming oven, which can be steamed or roasted. If there is no steaming oven, the steamer is the same.
