Fresh Shrimp Custard

Buy live shrimp in the refrigerator to let them sleep.

Take 3 heads, shells and shrimps.

Soak in green onion and ginger water for about 10 minutes to get rid of fishy.

Then blanch it in water at about 90 degrees for about 10 seconds. Don't blanch it for too long, otherwise the shrimp will grow old.

Chop up the fried shrimp and save a picture of the finished product.

Add water to the eggs. The firewood eggs I use are a little smaller, and the egg liquid is only 40 grams, so 65 grams of water is added. If the eggs are large, you can add more water. The amount of water is 1.5-1.8 times that of the eggs.

Stir well and sieve to make the egg liquid more delicate.

Add the shredded shrimp and stir.

Pour into the pot, serve the pot after the water boils.

The top can be covered with plastic wrap, but I like to cover it with a dish, which is safer. Steam it on medium heat for 7 minutes, and then simmer for 3 minutes.

The steamed egg custard is decorated with cooked shrimps, which is better to take pictures.

Tips:
The steaming time can be adjusted according to the amount of egg liquid. If it is 2 eggs, it can be steamed for 10 minutes.
