Fried Broccoli with Black Fungus

Preparation of main raw materials.

Black fungus, soak in warm water and set aside.

Break the broccoli into small pieces and soak in light salt water for about 10 minutes.

Soak the black fungus, pick and wash, peel the carrot and cut into thin slices.

Take a small bowl, add steamed fish soy sauce, oyster sauce, refined salt and appropriate amount of cold boiled water, mix into a sauce, mince garlic.

Boil water in a pot, add some salt and oil after the water is boiled, add the washed broccoli, blanch it for about 1 minute, remove and drain it and set aside.

Tips:
1: Broccoli flower buds are especially easy to hide small bugs, it is difficult to clean them only by washing, so soak in light salt water, you can directly soak out.
2: Chopped peppers have a salty taste, so add salt as appropriate.
3: When the black fungus is dry-fried, it is easy to fry, so when frying, it should be on a low heat to avoid scalding. In addition, you can blanch the black fungus in advance, and stir-fry it in the pot later.
