Because I usually make eggplants, I like to add dried shrimps, dried mushrooms, green peppers and tomatoes, plus some vinegar and peppers. The taste is very good.

1. Cut the eggplant into cubes and heat it in the microwave for two minutes, so that the eggplant will be easier to stew softly and the eggplant will absorb less oil.

2. Green peppers, shiitake mushrooms, fatty meat, garlic "dried dried shrimp and chili".

3. 1 spoon of sugar, 1 spoon of vinegar, 1 spoon of Lao Gan Ma, 2 spoons of light soy sauce.

5. Heat oil in a pan, add ingredients and saute until fragrant.

6. Put the eggplant into the pot, pour the fish sauce, add 1 small bowl of water, cover the pot and simmer for 3 minutes

7. Pour the thickened starch water before out of the pot, stir evenly and put on a plate.
