Fried Fungus with Yam
1.
Prepare the ingredients: Soak the fungus in advance, wash the carrots, peel and wash the carrots, put on gloves to handle the yam, peel and wash, soak the green peppers in light salt water for 10 minutes, and then wash them.
2.
Cut the green peppers, carrots, and yam into slices. After the yam is cut into slices, quickly soak and wash in light salt water to avoid discoloration.
3.
Add an appropriate amount to the pot, boil the yam and blanch it, then remove the cold water to wash off the mucus.
4.
The soaked fungus is boiled in boiling water for 5 minutes. The fungus is soft and smooth, with a particularly good taste.
5.
All the ingredients are ready.
6.
Add an appropriate amount of olive oil to the wok, saute the five-spice powder and ginger, add carrots and stir fry to change color, add green peppers and stir fry.
7.
Stir-fry until five mature, add fungus and yam, stir fry, pour a little water, so that the various ingredients are cooked through and the taste is more crisp and tender.
8.
Add a little abalone sauce, oyster sauce, original fresh soy sauce, and fresh vegetable seasonings to taste. If there are too many, the color is dark and unsightly. Take out the pan and serve.
