Fried Noodles in Oil When I Was Young
1.
The ratio of oil, ingredients and flour is 1:1:6. Coconut oil is not necessary, just increase the butter to 50g. The sesame must be crushed in advance.
2.
Turn the wok to the lowest heat (the whole process is low), put butter and coconut oil on it after a little warming, and melt
3.
Pour the flour and stir fry.
4.
There will be large particles, don't be afraid, stir fry, press and press, and don't stop the shovel.
5.
After half a minute, you get a pot of small white particles, and continue to fry.
6.
Obviously I feel that the color has turned yellow, and the particles are much more delicate, and it is 50% successful~ Come on and continue to fry
7.
Stir-fry for about 10 minutes to get a pot of beach-colored flour. There is a noticeable burnt smell (but don't burn it!!!)
8.
Pour in the crushed black and white sesame seeds and stir-fry for 2 minutes.
9.
Get a pot of fried beach-colored flour with crushed sesame seeds, and you will succeed! Turn off the heat and fry for another half minute.
Tips:
1. Coconut oil is optional, but butter is definitely more fragrant than cooking oil. Avoid using olive oil with special smells;
2. Roll the sesame seeds in advance, and if there are walnuts, also roll them into pieces for later use. Don't think about rolling out when frying the flour, the flour will go into the pan;
3. The whole process of frying the flour is only 15 minutes, don't stop the shovel;
4. When eating, you can mix 30g fried noodles + 10g brown sugar with cold water to make a sauce, then add boiling water to make a paste, which can be thin or thick, making it sweet; you can also add a small amount of pork floss and fine salt to the fried noodles. Salty.
