Fried Noodles with Mustard Pork
1.
Prepare ingredients.
2.
Spread the noodles flat in the pot
3.
After the fire is boiled, steam for about five minutes.
4.
Remove the steaming grid, so that all the noodles are immersed in the water in the pot, if the water is low, add some hot water, and boil again to turn off the heat.
5.
After removing the noodles, rinse with water until the soup becomes clear.
6.
After removing the draining water, add the cooking oil and shake well. (If there is a lot of steaming at this time, you can mix it and put it into a fresh-keeping bag and put it in the refrigerator. Whenever you want to eat, just take it out and stir-fry or mix)
7.
Prepared mustard. I use bagged pickled mustard, which tastes salty and just right. If it is the kind of pimple-shaped mustard, cut it in advance and soak some of the salt. This must be paid attention to.
8.
After cutting the meat into shreds, use cooking wine, pepper, and a little salt to make it very fresh, mix well, and slightly marinate.
9.
Cut green onion into sections, slice ginger, and slice garlic for later use.
10.
Heat oil in a pot, add green onion, ginger, garlic and stir fry until fragrant.
11.
Add pork shreds and fry until the color changes.
12.
Add shredded mustard and fry for a little fragrant.
13.
Put in the noodles.
14.
Note that you can use chopsticks to fry at this time, don't use the spatula anymore, you will know the difference between the two after you try it. Chopsticks can stir the noodles during the frying process, so that the noodles and the vegetables are mixed more evenly, and the heat can be evenly heated.
15.
During the frying process of the noodles, the moisture is slightly lost, which will make the noodles more chewy. According to your own preferences, you can add a little bit of flavour or soy sauce. Be careful not to add too much, because the mustard tuber itself has salt, and we have already marinated the shredded pork to give it a bottom taste.
16.
You can turn off the heat after stir-frying again.
17.
Add some red peppers to garnish. You like spicy ones. You can put millet spicy ones. You can’t eat spicy ones. Choose slightly spicy or non-spicy red peppers.
Tips:
There are roughly four points to make a good pot of fried noodles:
1 The noodles are steamed and then boiled, so that they are chewy.
2 Cool the cooked noodles and mix them with oil, so that the noodles are more refreshing and non-sticky.
3 When frying, try to use a non-stick pan, so that less oil is more healthy.
4Try using chopsticks to stir-fry noodles, the effect is better!
