Put an appropriate amount of water in the wok and boil on high heat until it boils. Put more water in the noodles.

After the water boils, add a little salt, put the soda noodles in a boiling water pot, and cook until they are 80 to 90 minutes cooked. Do not cook them completely, because there is a process of frying the noodles later. The noodles that are cooked until they are fully cooked will lose their texture, and they are easy to fry when they are fried. Remember to stir with chopsticks to prevent the noodles from sticking.

After the noodles are cooked, remove them, soak them in cool boiled water, then remove them to drain the water, add a few drops of cooking oil, and mix well with chopsticks to prevent stickiness.

Beat the eggs into a bowl, add a pinch of salt and 1 teaspoon of water. Adding water can make the scrambled eggs more fluffy and tender.

Tips:
1. The best noodles for making fried noodles are those with stronger toughness and not easy to boil. I use alkaline noodles.

3. Light soy sauce, dark soy sauce and xo sauce are all salty, no need to add salt. If you like spicy flavor, you can also add chili or chili sauce.
