Fried Pomfret

Wash the small pomfret, cut a few knives on both sides of the fish, sprinkle with pepper, star anise, salt, green onions, ginger, cooking wine, mix well, and marinate for 15 minutes.

Fry the small pomfret until golden on both sides and fish out.

Leave the bottom oil in the pot, add dried chili, green onion, ginger, garlic and stir-fry, add dark soy sauce, vinegar, cooking wine, sugar, a small amount of water, put the small pomfret after the water is boiled, and cook for 5 minutes.

Tips:
White sugar can be used for freshness, just a little bit.
