Fried Potato Shreds with Pickles

Peel and shred potatoes to wash away the starch.

Shred the pickled cucumbers.
3.
Boil water in a pot, and add shredded pickled cucumbers to the boil.

Boil the potato shreds in water.
5.
Remove the controlled water for use.
6.
Heat the oil and add dried chilies.
7.
Add chopped green onion and stir fry until fragrant.
8.
Put potato shreds and pickled cucumber shreds and stir-fry evenly.
9.
Add light soy sauce, salt and chicken essence and stir fry evenly.
10.
Out of the pan.
