Fried Prawns

Remove the shrimp whiskers, shrimp feet, sandbags, open the back to remove the shrimp thread,

Use kitchen paper to soak up the moisture,

With a thin layer of starch,

The oil is at 70% temperature, deep-fried until golden and fished out,

Slice green onion, ginger, garlic, red pepper into sections,

The oil is at 50% temperature, and the red peppers are cooked until they change color.

Soybean oil + sesame oil saute the shallots, ginger, garlic,

The ratio of vinegar to sugar juice is 2:1,

Pour in the prepared sauce, melt the sugar over a low fire,

Pour some light soy sauce to taste,

Pour the prawns and stir fry quickly,

Cover it with sauce and set it out on a plate.
Tips:
Prawns are not easy to fry for a long time in order to retain the crispy texture of the shells and the Q bombs of the shrimps.
