Fried Rice with Enoki Mushroom and Egg

Disperse the leftovers first, as it is too big to fry.

Remove the roots of the enoki mushrooms, tear them apart, wash, squeeze out the water, and cut into sections. Enoki mushrooms must be squeezed out of water when used for fried rice, otherwise it will become rice in soup.

Pick up the frying pan and stir in two eggs and stir-fry them.

Add enoki mushrooms and stir fry until soft.

Add leftover rice and stir fry, sprinkle in salt and stir-fry well.

Add the braised soy sauce and stir well, then serve.
