Olive vegetable is a special flavor side dish in Chaoshan area. It is made by decoction of olive and plump leaves of mustard. Clear, fresh, refreshing, tender, smooth, rich in oil, delicious and attractive, it has become the daily home dishes of Chaoshan people.
I usually buy olive vegetables at home with steamed buns. Today, I made a whim and fried it with leftover rice. I didn't expect it to be so delicious.

Ingredients

Fried Rice with Olive Vegetable and Egg

1. Prepare a bowl of leftover rice, olive vegetables, an egg, chives, and a little vegetable oil.

2. Wash the scallions and cut the white onion and the scallion leaves separately (the scallion leaves are sprinkled on top before being cooked)

3. Beat the eggs into a bowl and stir evenly, heat the pan with cool oil, pour in the egg liquid and scatter with chopsticks, set aside

4. Put oil in a non-stick pan, put in chopped green onion and sauté until fragrant on low heat, put in rice, press evenly with a wooden spatula

5. Add 4 spoons of olive vegetables and stir fry

6. Add the egg and stir fry evenly

7. Sprinkle chopped green onion at the end

8. Stir well and get out of the pot
