Ingredients: 1 green onion, 2 eggs, a small bowl of leftover rice, half a carrot

Wash the carrots, peel them and cut into small cubes. Cut the green onions into sections and mince some

Beat the eggs into egg liquid

Put the oil in the pot to heat up, add the shallots

Fry slowly over low heat until slightly yellow

After simmering the scallion oil, remove the scallions, pour in the diced carrots and stir fry

After the carrots are fried until they are dead, pour in rice and stir-fry.
