Fried Rice with Scallion Oil and Egg

Wash and chop the chives and set aside.

Beat the eggs in a bowl and set aside.

Add oil to the pot, heat up on high heat, add green onions and stir until slightly charred.

Pour in the beaten rice that has been cooked beforehand.

Pour in the soy sauce and stir-fry evenly.

Then pour in the egg liquid.

Stir-fry quickly until the egg wraps each grain of rice, then sprinkle with chopped green onion and stir-fry to turn off the heat.

Put it into a bowl and enjoy.
