Fried Rice with Shrimps and Green Beans (slapped Fried Rice)

1. Frozen shrimps are defrosted at room temperature, and carrots are diced

2. Shell the shrimp and remove the shrimp head. Set aside the shrimp head. Put a little salt in the water and blanch for 20 seconds.

3. Mash the salted duck egg yolk and egg white separately

4. When the oil in the pot is hot, add the shrimp heads to burst the red oil, discard the shrimp heads

5. Add egg whites, egg yolks, green peas, carrots, leftover rice and stir fry. Finally, add shrimp and stir-fry.

Tips:

Because salted duck eggs were added, I added appropriate amount of salt according to my taste. I started without adding salt.
