Fried Shrimp

Fresh shrimps are shelled and fishy thread removed.
Dice the cucumber.

Sizing the shrimps: Pour 10g of egg white, 3g of wet starch, and 2g of salt. Stir well.

Making [Sauce]: Add 10g wet starch, 2g chopped green onion, 8g ginger juice, 3g salt, 6g cooking wine, 3g chicken essence and 60g water.

Put oil in the wok and add 2g of minced ginger first.

Add the marinated shrimp and stir fry until the color turns red.

The cucumber diced before adding it. Stir fry for 1 minute.

Pour in the [sauce] and stir fry quickly. Until the juice wraps all the ingredients.
8.
Out of the pan into a plate.
Tips:
Add cooking wine when you don't want to pickled shrimps, which will make the fresh shrimps lose their original sweetness.
Don't cook the cucumbers for too long, just cut them off.
