Fried Shrimp

Wash the white shrimp and control the moisture.

Cut the middle section of the chives into small sections about 5 mm.

Cut the remaining green onions into sections, separate the white and green onion leaves, and shred the ginger.

Start the frying pan, add more oil than usual for cooking, add green onion leaves and fry the green onion oil. (If you like to deep-fry the prawns, add more oil)

Remove the scorched green onion leaves and add shrimps.

Fry the prawns until they become discolored and mature, then remove the oil for control. (If you like to eat crispy shrimp, you need to fry it for a while)

Leave a small amount of oil in the pot, add scallion and ginger while remaining warm until fragrant.

Add the shrimp and stir-fry for a few times. After the shrimp is cooked, add salt to taste. Since the shrimp itself is relatively fresh, no other seasoning is added to highlight the original taste of the shrimp.

Add the remaining chopped shallots and stir-fry evenly out of the pan.
