Fried Shrimp with Celery and Cashew Nuts

Wash the shrimps and drain the water. Knock the eggs in a bowl, leaving only the egg whites. After making a bubble with chopsticks, add salt, cooking wine, and starch to mix evenly, then put the shrimps inside and grab them by hand, so that the shrimps are covered with paste. Tear off the old tendons of celery stems, wash them, and cut them into sections diagonally.

Wash the cashew nuts and put them in a 50% hot oil pan and fry them.

Peel and diced carrots, stir-fry them in a pan and remove them.

Add the shrimps in a hot pan with cold oil and fry them smoothly.

Add celery and stir fry.

Add carrots, add salt and stir fry.

Sprinkle in chicken essence.

Turn off the heat and pour in the sesame oil, pour in the cashew nuts and mix well.

Take out the pan and serve.
Tips:
Shrimp should not be eaten by people suffering from chronic diseases and when they are getting angry; elderly people suffering from allergic rhinitis, bronchitis, and recurrent allergic dermatitis should not eat shrimp; shrimp is a disease caused by wind and should not be eaten by people suffering from skin scabies.
