Fried Shrimps

Put the bought shrimp in a basin and wash them with water three times.

Cut off the shrimp whiskers and the front legs, and pick out the shrimp intestines from the second joint on the back, so that the shrimps are very beautiful. Take care of all the shrimps.

Rinse the processed shrimp under running water for another minute to drain the water.

Cut the green onion and ginger and set aside.

Heat the pan with cold oil to explode the fragrance of the onion and ginger.

Add the prawns and stir fry until all the prawns turn red, add cooking wine and cook until fragrant.

Add light soy sauce, dark soy sauce, salt and sugar, stir-fry evenly, add a small bowl of water and simmer for 10 minutes.

Serve and add a few coriander leaves to garnish.
Tips:
Shrimp must be alive to ensure that the ingredients are fresh. The fishy smell can be removed by cleaning the silk shrimp thread. When the shrimp is braised, the small fire shrimp will be very tender.
