Fried Small Sea Prawns

Scallion and ginger sliced rice

Cut off the beards of the small sea prawns, put oil in the pot, make the oil wider, and burn to 70% hot. The oil temperature must be high. Add the shrimp and fish out in 30 seconds. When the oil temperature rises to 70% hot, add the shrimp again for 20 seconds to fish out. This way the prawn skin is crispy, but the prawn meat remains tender

Start the pot again, put the oil in the scallion and ginger rice, stir fragrant on low heat

Add yellow wine light soy sauce and white sugar, cook on medium heat, wait until the juice is thick, add the fried shrimp, stir-fry on high heat, and coat the juice. The whole process takes about 1 minute.
