Fried Yam with Black Fungus

Tips:
This dish needs to be stir-fried on high heat when frying, because the ingredients are basically cooked, just a few turns.
The final thickening can make the fungus and yam look moisturized, and not look dry.

If the yam is sliced and not used for a long time, it should be soaked in salt water to prevent oxidation and blackening.
